Cita rasa serta bentuk yang menarik dari abon yang membuat banyak peminatnya Jenis penelitian yang digunakan dalam penelitian ini adalah penelitian deskriptif. Sampel adalah Abon Belut (Monepterus Albus) dengan penambahan tempe (Glycine max) Panelis adalah mahasiswa Jurusan 3 Poltekkes Kemenkes Palu sejumlah 100 orang. Data diolah menggunakan exel dan aplikasi IBM SPSS Statistics 24. Hasil penelitian menunjukan bahwa persentase daya terima terhadap aspek kenampakan untuk formula 1 (70%), formula 2 (72%) dan formula 3 (70%). Persentase daya terima untuk aspek bau untuk formula 1 (62%), formula 2 (51%) dan formula 3 (52%). Persentase aspek rasa untuk formula 1 (70%), formula 2 (50%), dan formula 3 (42%). Persentase aspek tekstur untuk formula 1 (72%), formula 2 (58%), dan formula 3 (35%). Berdasarkan hasil penelitian dapat disimpulkan bahwa pengembangan abon belut (Monepterus albus) dengan penambahan tempe (Glycine max) yang dapat diterima hanya formula 1 dan formula 2 sedangkan formula 3 tidak dapat diterima.
